Speedy Gonzales jólastress-súpa / Speedy Gonzales Mexican tortilla soup

Þessi súpa er upplögð á aðventunni, hún er í senn holl, fljótleg og ótrúlega bragðgóð.

Súpa

200 gr rauðar linsubaunir
1 dósir hakkaðir tómarar
1 stór dósir tómatpúrra
1 - 2  teningar kjúklingakraftur
2 gulrætur
1 laukur
2 hvítlauksrif
1 sellerýstöngull
1 msk Cummin
1/2 msk Turkmerik
1 tsk msk Cayannepipar
1 msk Kóríanderkrydd

Setjið gulrætur lauk, hvítlauksrif og sellerý í blandara og mixið smátt. Setjið grænmeti í pott í 3 msk af olíu og steikið á lágum hita í 5 mín (ekki brúna)
Bætið tómötum, púrru, krafti, kryddi og linsum í pott og fyllið upp með vatni (2 - 3 lítra). Fáið upp suðu og sjóðið á lágum hita í 20 - 30 mín og smakkið til með salti og pipar.


Salat
Hér má nánast nota við hvað sem þig eigið í ísskápnum en þetta er mín tillaga:
1 avókadó
1-2 paprikur (rauðar, gular eða appelsínugular)
1/2 rauðlaukur
1/2 mangó
góð lúka kóríander

Skerið í litla teninga og blandið saman í skál á  meðan að súpan er að sjóða.



Smá tortillur
2-3 Tortillur (ég nota spelt)
150 gr rifinn ostur


Hitið ofinn í 200 gráður. Stráið ostinum yfir kökurnar og bakið í 6 - 8 mín eða þar til að osturinn er vel bráðinn og gulur. Skerið í litlar pizzasneiðar og berið fram með súpunni.

Setjið súpu í skál og setjið 2-3  matskeið af salati og toppið með sýrðum rjóma þegar borið er fram.


Það er frábært að gera tvöfalda uppskrift, frysta helminginn af súpunni og eiga holla og góða súpu klára í jólastressinu. Ég mæli þó ekki með að frysta salatið heldur að bera það alltaf fram ferskt og nýskorið.

Speedy Gonzales Mexican tortilla  soup

This soup is ideal in the cold winter, it is  affordable, quick and incredibly tasty.

Soup
200 g red lentils
1 can tomatoes (400g)
1 can tomato purrey
1 1/2 - 2l chicken stock
2 carrots
1 onion
2 garlic cloves
1 celery
1 tablespoon Cumin
1 / 2 tsp Turmeric
1 tsp  Cayennepepper
1 tsp Coriander

Place carrots, onion, garlic and celery in blender and mix in to small pieces. Place vegetables in a pot in 3 tablespoons of oil and cook on low heat for 5 minutes (don't brown it)
Add the tomatoes, spice, chicken stock and lenses in a pot and bring to it to a boil. Boil it on low heat for 20-30 minutes and  taste with salt and pepper.

Salad
Here can be use almost anything you have in the fridge but this is my suggestion:
1 avocado
1-2 peppers (red, yellow or orange)
1 / 2 red onion
1 / 2 mango
Finely cut coriander

Cut into small cubes and mix together in a bowl while the soup is boiling.


Little tortillas
2-3 Tortillas
150 gr grated cheese (Cheddar)

Heat the oven to 200 degrees. Sprinkle cheese over the cakes and bake for 6 to 8 minutes or until cheese is well melted and yellow. Cut into small pizza slices and serve with the soup.

Put the soup in a bowl and put 2-3 tablespoon of salad and top with sour cream when served.


It's great to double the recipe, freezing half the soup you made and have a healthy and a good  soup ready to graph any time. I suggest not to freeze the salad, but to  always have it fresh.

  6. Ég hef fengið þau í Krónunni og Nóatúni, þetta er íslensk framleiðsla en ég man ekki frá hverjum þau voru. Sp með að ath í Hagkaup :)
